Zucchini (& carrot) Pancakes

1 large Zucchini

cut end off and peel zucchini

grate zucchini

2 Carrots -grated

1 Onions - cut into cubes (suggested red onion)

mix onion and carrots in a bowl

cover with hot water (ingredients will become soft)

and salt and mix

let mixture sit

Squeeze water from carrots and onion mixture and add put then in a mixing bowl.

Add grated zucchini to the bowl.

Break and add 2 eggs, salt, and pepper. - salt & pepper (optional)

Mix well

Add 100 grams of flour. (wheat or other)

Add 1 tsp chemical yeast

Mix well to creamy consistency.

Coat bottom of frying pan with generous amount of oil; and heat.

Use large measuring spoon to scoop mixture, into pan, and shape.

Cover pan and let fry.

When browned, flip pancake and fry the other side.

When both sides are browned, let rest on napkin to absorb excess oil.
