A mixture of potato salad, tuna salad, and chopped egg salad
A great way to repurpose leftovers or just a new way to think of salads:
Ever have a small amount of left-over mashed potatoes, or one baked potato? It is just enough for lunch or a snack; not enough for a whole meal...
Whenever I see cold cooked potatoes in my refrigerator, the first thing that comes to my mind is potato salad. But, one time I had the taste for tuna too. I couldn't pick between the two so I decided to mix them together. It was delicious. Since then, I keep tuna pouches at the ready.
The link below takes you to an actual recipe that is very similar to what I do. But, I almost never have the same recipe because I am usually using left-overs. I have used left-over mashed potatoes that have spinach, garlic, onions, and cocoanut oil. I have used a plain baked potato. I have even used fried potato slices with sautéed onions and green peppers.
In general, if I have potatoes left-over, I'll use them to make Stuffed Potato Salad by adding a pouch of tuna, celery seed, salad dressing (which ever I'm using at the time), onion, garlic, sweet relish, salt, pepper, and an boiled egg (optional).
By serving this salad mixture over a bed of fresh lettuce I can turn a simple cup of potatoes into a complete meal in just minutes.
