When cozy cravings call, these Cheeseburger Nachos answer. A golden, melty blend of hearty beef, black beans, and sweet corn layered over crisp tortilla chips — elevated with fresh greens and a creamy, savory cheese sauce. It’s weeknight comfort with a balanced twist.
Ingredients
1 lb lean ground beef
1 cup black beans, rinsed
1 cup sweet corn kernels (fresh, frozen, or roasted)
1 cup diced tomatoes (or Salsa-style mix)
1 cup chopped spinach or kale
1½ cups shredded cheddar or Monterey Jack cheese
¼ cup milk or cream (for a smoother sauce)
1 tsp garlic powder
½ tsp smoked paprika (opt)
Salt + pepper to taste
Tortilla chips, for serving
Directions
Brown the Beef: In a large skillet, cook ground beef over medium heat until browned. Drain any excess oil.
Build the Base: Add black beans, corn, tomatoes, and greens to the skillet. Stir and simmer for 5 minutes, letting the flavors come together.
Melt & Blend: Reduce heat to low. Stir in the cheese and milk until creamy and smooth. Season with garlic, paprika, salt, and pepper.
