When cozy cravings call, these Cheeseburger Nachos answer. A golden, melty blend of hearty beef, black beans, and sweet corn layered over crisp tortilla chips — elevated with fresh greens and a creamy, savory cheese sauce. It’s weeknight comfort with a balanced twist.

Ingredients

  • 1 lb lean ground beef

  • 1 cup black beans, rinsed

  • 1 cup sweet corn kernels (fresh, frozen, or roasted)

  • 1 cup diced tomatoes (or Salsa-style mix)

  • 1 cup chopped spinach or kale

  • 1½ cups shredded cheddar or Monterey Jack cheese

  • ¼ cup milk or cream (for a smoother sauce)

  • 1 tsp garlic powder

  • ½ tsp smoked paprika (opt)

  • Salt + pepper to taste

  • Tortilla chips, for serving

Directions

  1. Brown the Beef: In a large skillet, cook ground beef over medium heat until browned. Drain any excess oil.

  2. Build the Base: Add black beans, corn, tomatoes, and greens to the skillet. Stir and simmer for 5 minutes, letting the flavors come together.

  3. Melt & Blend: Reduce heat to low. Stir in the cheese and milk until creamy and smooth. Season with garlic, paprika, salt, and pepper.

  4. Serve Simply: Spoon the warm cheeseburger mix over a layer of tortilla chips. Top with a sprinkle of fresh greens or diced avocado if desired.
