Busy Girl Johnny Cakes

A perfect mixture of savory corn bread with the fluffiness and sweetness of pancakes,

mixed and pan-fried in just minutes.


1 1/2 cups of pancake mix

1 cup of cornmeal

1 teaspoon of baking soda

1 egg

1/4 cup of applesauce

1/2 cup frozen sweet corn kernels

1/3 cup of sautéed green peppers and onions

1 tbsp. crushed red pepper (opt)

1 cup of water


-Mix the dry ingredients together in a bowl.

-Sautee green peppers and onions; let them cool.

-Mix wet ingredients into dry ingredients (except water).

-Slowly mix in water a little bit at a time until the batter

is thick and creamy.

-Drop spoonfuls into hot, greased frying pan.

Serving suggestions:

  1. Plain on the side (as a bread) with turkey sausage, turkey bacon, a bowl of beans, soup, etc.

  2. Covered with chili and cheese,



After thought:

You could chop sausage into the batter. I would cook sausage first because the Johnny Cake fluffs and cooks so quickly.
