Sautéed Corn, Zucchini & Peppers Skillet

Ingredients 1/2 yellow onion 1/2 green bell pepper 6 garlic cloves minced 1 bag of frozen corn, cooked (I used microwave to steam it) 1 red bell pepper diced 1-2 zucchini, diced 1-2 tsp of creole seasoning (Season to taste)



Cook the corn according to package and set aside. In a cast iron pan heat up 2 tbsp of olive oil on medium heat. Add onions and green bell peppers. Sauté for about 3 mins or so until onions are translucent. Next add garlic and a little more oil if needed to avoid sticking. Sauté for 30 seconds to release the fragrance. Next, add corn into the skillet and sauté for another 2 mins, allow the corn to incorporate in the onion mix. Next, add the red bell peppers and zucchini. Add creole seasoning. Stir in and mix well. Turn heat down to low. Cover the veggies for 2 mins just to allow the zucchini to heat through, just enough to warm them they should still have a bite to them. Take off heat and serve! Enjoy!


*add the red bell peppers and zucchini last so they won’t over cook and still have all their nutrients.
