Almond Joy Yogurt Cookies

Ingredients

· 1 – 14 ounce bag flaked coconut sweetened

· 1 – ounce sweetened yogurt

· ⅔ cup roasted and salted almonds roughly chopped

· 2 cups semi sweet chocolate chips


Chocolate chip coconut macaroons on a blue plate. The cookies are golden brown with shredded coconut and chocolate chips, creating a sweet and inviting scene.

Instructions

  1.  Preheat the oven to 325 degrees F.

  2. Prepare a cookie sheet by lining it with parchment paper* or a baking mat.

  3. In a large mixing bowl, combine the sweetened coconut, yogurt, chocolate chips and almonds.

  4. Stir until all ingredients are combined.

  5. Scoop the cookie dough into small balls on the cookie sheet.

  6. Use your hands to slightly flatten the tops. The cookies will not spread much when baking.

  7. Bake for 12-14 minutes or until the edges become golden brown.

  8. Allow cookies to fully cool before removing from the cookie sheet.


*Parchment paper is critical for these cookies to turn out right. Silicone mats, waxed paper, etc. will yield a slightly different result.
